Here is where we get to the meat—pardon the pun—of the recipes, the main course. As a chef in the ’90s, I witnessed the entire kitchen groan whenever a guest ordered a vegetarian meal. This wasn’t “real” food; what kind of person didn’t want lamb racks and beef tenderloin? So they served whatever veg and starch were available as sides for the carnivore plates and called it a meal. After watching this sacrilege a few times, I quietly took over creating a properly balanced vegetarian or vegan meal because I fell into this dreaded group myself. Soon, that section of the menu for the dining room and events was my territory, and I knew I had won when twenty wedding guests, including the bride, requested the vegetarian option after seeing the first plate come out. Plant-based main courses are vibrant, texture-packed, and redolent with spices, herbs, and lovely flavors. These recipes come from all over the world and turn out spectacular when made in an air fryer.

I love to make desserts and sweet treats. I was a pastry chef for many years, and I tend to bake when upset; it took me almost ten years to realize my husband would deliberately annoy me so I would whip up a batch of cookies or make a triple-layer cake. I could have named a couple of these recipes specifically after a tiff or two from over the years! Air fryers are quite effective for any fried item, such as donuts or fritters, but who knew cakes and pies are exceptional in this little appliance? As with the other recipes in this book, the air fryer model will affect the recipe’s time and temperature, perhaps even more for baked goods. So, tweak the recipe if the results aren’t perfect, and eat the “failures” with no guilt; they, of course, don’t count as calories!
